ABALONE ‘ASIAN FUSION’ SALAD

INGREDIENTS:

  • 1 Ocean Road Prime Abalone

  • 1 cup flat rice noodles (cooked)

  • 1 cup rocket

  • 1 cup bean shoots

  • ¾ cup coriander leaves

  • 1 ½ sheets nori (crumbled)

  • ½ red chilli

(Dressing)

  • 1 tbsp. pickled ginger

  • 1 tbsp. balsamic vinegar (thick)

  • 2 tbsp. rice wine vinegar

  • 1 tbsp. sweet chilli sauce

  • Juice of ½ lime

 

METHOD:

  • Combine dressing ingredients

  • Slice abalone meat finely and combine with half dressing, rest in fridge for half an hour

  • In salad bowl combine cooked noodles, rocket, bean shoots, coriander and nori and dress with remaining dressing

  • On serving plate pile salad and top with abalone meat and its dressing

  • Serve with fresh lime cheek and thin sliced red chilli sprinked on top
