Abalone "Asian Fusion" Salad

Abalone salad

Serves 1

INGREDIENTS:

  • 50g Ocean Road Prime Abalone
  • 1 cup flat rice noodles (cooked)
  • 1 cup rocket
  • 1 cup bean shoots
  • ¾ cup coriander leaves
  • 1 ½ sheets nori (crumbled)
  • ½ red chilli
  • (Dressing)
  • 1 tbsp. pickled ginger
  • 1 tbsp. balsamic vinegar (thick)
  • 2 tbsp. rice wine vinegar
  • 1 tbsp. sweet chilli sauce
  • Juice of ½ lime
METHOD:
  1. Combine dressing ingredients.
  2. Slice abalone meat finely and combine with half dressing, rest in fridge for half an hour.
  3. In salad bowl combine cooked noodles, rocket, bean shoots, coriander and nori and dress with remaining dressing.
  4. On serving plate pile salad and top with abalone meat and its dressing.
  5. Serve with fresh lime cheek and thin sliced red chilli sprinked on top.
